Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 500g cream cheese
  • 150g sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 200ml sour cream

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Crush the digestive biscuits and mix with melted butter. Press into the base of a springform pan.
  3. In a bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.

    You can replace the yogurt with a plant-based yogurt for a lactose-free version.

  5. Add vanilla extract and sour cream, mix until combined.
  6. Pour the mixture over the biscuit base and bake for 45-50 minutes.
  7. Let it cool, then refrigerate for at least 4 hours before serving.
